Hey thanks!

I can't wait to get to the desert (which will be sooner than I thought).

Yeah, pretty much anywhere, you have to get really specific about what is and isn't vegan.

Sometimes the rice is fried in lard. :)

The pictures you are getting are truly epic. I've saved a bunch of them on my computer at home, and I'm dying to get your shots of the desert.

I wish I knew of any good south-west places for you to eat, but I've never been through that region. You might be slightly S.O.L. since Mexican/South West relies heavily on meats, and anything advertised as "Vegetarian" might contain cheese, butter or, um, meat.

However, you can't go wrong with mexican rice, grilled peppers and avocado. Simple, classic, light.

I'm so freaking jealous!!

"Please trash your plates after finished eat your food". I couldn't have said it better. Wonderful pictures today complete with ominous sky. I hope more sunshine comes your way--which reminds me--I'll be in California in 2 wks. The day your scheduled to be in San Luis Obispo I'll be 1 hour away--maybe we can meet somewhere in the middle. Could you make a 30 min. detour?

Nope, no to go menus. But they didn't have a LOT of stuff on the menu.
You'll be pleasantly surprised. I wonder how long they've been around.

Yep, they ended up in Amarillo, Texas. They opened Chinese Restaurants. And hardly anyone noticed. heheh.

I don't have all that much exposure to the whole south west food thing. Not yet anyway. I think that will start in Santa Fe.
We shall see.

I kinda figured curry was a generic flavor. The Chinese used curry as a way to make chicken more "exotic" and to jack the price up. Curry is more prevalent here and it is without the exotic overtones the Chinese placed on in. I suppose it's like middle American's fascination with "authentic South West" flavor. Since you are in the South West now, you can comment on that. Also there are a lot of Vietnamese who fled after the war that ended up in Texas.
